So the story goes, two guys loved making Belgium style beer and met while attending the Siebel Institute in Chicago while studying to become professional brewers. After going their separate ways, they reunited in 2009 to start brewing and build Funkwerks. In February of 2011 it officially opened in Fort Collins and has been serving some great saison beers ever since.
Atmosphere: From the outside, Funkwerks looks slightly like an industrial building with a brewery inside. Maybe because it is. But once inside there is a warm glow from the accent lighting shining on the local artwork that is tastefully displayed on the walls. The wrap around bar is accented by corrugated tin while the rest of the room is accented with horizontally laid wood work, that gives the entire room a warm and fuzzy feeling. We couldn’t miss the chalk board displayed on the bright green painted wall behind the bar displaying the beer being offered on this day. There is a small patio area outside with brightly painted chairs and a bar top table for warmer days.
- Saison – Smells of passion fruit, citrus and pepper. This hazy orange-hued beer pours with an airy foam. Aromas of passion fruit, tangerine, and black pepper hit the nose. It has a dry and lingering bitter taste with a medium body. Our favorite here!
- Tropic King –It has hints of fruity characteristics combined with ginger flavor. The beer appears flat and a golden honey color yet thick. Has a light taste with a pepper kick but goes down smooth.
- Brett Dream -Fermented with two saison yeasts and a bit of Brettanomyces, this beer has a cellar limit of 2 years. This hazy golden beer has aromas of pineapple and citrus flavors to provide a sweet malty taste. It has a medium body and a sour taste overall.
Amenities: Tap room, Funkwerks merchandise for sale, patio area, no food but snacks available for purchase.
The Buzz: Beer dinners, tasting events weekly, live music on select nights.
